Lucknow/Gautam Budh Nagar : Uttar Pradesh ’s culinary heritage took centre stage at UPITS 2026 on Saturday, with One District One Cuisine (ODOC) pavilion emerging as a major crowd-puller at India Expo Centre and Mart.

Featuring traditional recipes and local produce from all 75 districts under the theme ‘One State, Many Flavours’, the pavilion offered visitors an immersive cultural and culinary experience. Officials said CM Yogi Adityanath ’s ODOC initiative aims to preserve local culinary traditions, support rural agricultural economies and showcase indigenous flavours to global buyers and domestic visitors. A key attraction was the interactive masterclass, where culinary experts demonstrated how to prepare thekua, a traditional delicacy from Purvanchal. Using GI-tagged Mirzapur jaggery, the chefs showed attendees how to select ingredients, prepare the dough and fry the thekua using traditional techniques. The demonstration also highlighted the economic and agricultural value of the jaggery industry. The pavilion’s food street, ‘Khau Gali’, drew large crowds throughout the day, with authentic dishes from Awadh, Braj, Bundelkhand, western Uttar Pradesh and Purvanchal. Download the TOI App.

Renowned chef Harpal Singh Sokhi is scheduled to lead a masterclass on Sunday, adding star appeal to the four-day culinary showcase and blending indigenous recipes with contemporary methods.
