They said since there was no labelling, they could not ascertain how old the stock was. Since our seating capacity is huge, we do require some stock and in case there is a disruption in supply, one to two days’ worth of stock is required to be kept,” said Edwin Hsieh, one of the owners of the restaurant. “We found a considerable quantity of edible oil that is used and needs laboratory testing,” said a KMC source. The restaurant management said the civic officials did not issue any instructions to suspend operations following the inspection. “Since we do not have any stock for tonight, we have told our supplier to replenish the stock,” said Hsieh.
At the end of the visit, the food inspectors raised serious questions about the duration for which chicken and fish had been stored in freezers. “That was our four-day stock approximately. They have taken that stock away but did not instruct us to suspend operations. Apart from destroying the meat stock, the KMC food inspectors collected samples of ‘used’ edible oil and breadcrumbs for laboratory testing. Kolkata: As part of a food safety drive, a KMC team of food inspectors on Wednesday conducted a surprise visit to a well-known restaurant in Tangra, spending nearly three hours checking its entire inventory of food stock.
