The Kolkata Municipal Corporation (KMC) has officially lifted the suspension notice on the license of Roots, a popular rooftop resto-bar located near Exide on Chowringhee. This decision marks Roots as the first establishment among over 60 restaurants that received similar notices to be granted permission to resume operations. The KMC’s action reflects a significant step towards normalcy for the city’s dining scene.
Each eatery needs to have a FOSTAC trained employee for every 25 food handlers.
The suspension notice was revoked on the basis of documents submitted by the restaurant, according to KMC. Restaurant owner Ramesh Kumar Agarwal said the restaurant had filed an application for resumption of business along with results of tests on its food samples that had been carried out at an accredited laboratory. There is yet no evidence from lab tests about any stale meat being stored in a Kolkata restaurant,” said Sagar Daryani, national president of NRAI. “Labelling is must to ensure that food purchased or cooked earlier is served first,” said Sudesh Poddar, president of HRAEI.

The body has also asked members to attend the Food and Safety Training & Certification (FOSTAC) sessions for food supervisors across restaurants in the city. The Hotel and Restaurants’ Association of Eastern India (HRAEI) has urged its members to ensure that raw vegetables and meat are washed, cleaned and then stored in permitted containers.
